_Papas_ appear in a wide array of Mexican dishes, and have been included in Tex-Mex for years. Most notably, they are an important ingredient in _migas_, a popular favorite of all Mexican breakfast dishes. They also are included in some versions of _carne guisada_, though not all. I prefer _carne guisada_ with rather than without _papas_. _Tampiqueno_ is a Mexican style very thin grilled steak served with beans, guacamole, shredded lettuce, and Mexican style fried potatoes. Widely available and often very good. Grilled poblano and Jalapeno peppers are usually included.
