Pig Stand had restaurants across the country, from New York and Florida to California, and predated Sivil's by 15 years. But neither was the first chain restaurant. Harvey House Restaurants operated as a component of railroad statons across the country, starting in 1875. Delmonico's operated multiple restaurants in New York City and one in New Orleans, some of them opening before the Civil War. There were quite a few Harvey Houses in Texas, including one in the old Union Station in Dallas. All had closed by the early 1940s. Dallas's closed about the same time as the Pig Stand first opened. Since Harvey Houses started to close well before the decline in railroad travel, and well before the Great Depression, also, I don't know why the chain faltered. Evidently it was a very upscale place to dine.

I have eaten in a restored Harvey House, operated with the name (which took a while to track down legal permission for according to the owner), in Waynoka, Oklahoma. I understand there is one in Hugo, Oklahoma as well. I do not know of a restored Harvey House in Texas.
